Xarel lo is a white grape variety grown mainly in the Penedès wine region in Catalonia, Spain. It is one of the three grape varieties used in the production of cava, the Spanish sparkling wine, along with Macabeo and Parellada.
Xarel·lo wines tend to be medium-bodied, with fresh acidity and an intense, fruity flavour, often with citrus, apple, and peach notes. They can also have floral and herbal notes, as well as a mineral touch.
Xarel·lo is often used in the production of sparkling and dry white wines and has earned a reputation for its ability to add complexity and character to sparkling wine blends. Xarel·lo wines can age well in the bottle, and some producers have begun to experiment with producing dry white wines aged in oak barrels, which can have a more complex and silky texture and flavour.
