The Pinot Noir grape variety is exquisite, very aromatic, and seductive. It is one of the oldest varieties that was the predecessor of other types of grapes such as Chardonnay. It is a red variety native to Burgundy that also spread to a large part of the world: the United States, California, New Zealand, South Africa, Italy, Canada, or Chile, although it is not very present in all these countries. The most outstanding pinot noir Spain wines are found in the Penedès, Costers del Segre and Ribera del Duero. These are the denominations and areas where Pinot Noir wine is most cultivated.
Pinot Noir grape clusters are small and cylindrical. Vineyards are sensitive to pruning techniques, soil, frost, wind, and shoots. Pinot Noir red wines accurately reflect the land where they grow. Being so sensitive you must have a cure for diseases. The clusters are delicate, and it is customary to restrict yield and fertility.
The must that is produced is not very tannic, very different from Cabernet Sauvignon wines. Pinot Noir wines are smooth, generally fruity, and very pleasant wines. In the case of young Pinot Noirs, the flavour is reminiscent of cherries and red berries. They are very sweet and elegant.
Since Pinot Noir wine has such high acidity, it contemplates an enormous versatility of combinations: white meat, red meat, and game meat.
