Clàssic Penedès sparkling wines are recognized for their high quality and since 2014, with the arrival of new wineries, these wines became known as Clàssic Penedès sparkling wines.
The elaboration of these wines follows the traditional and ancestral method, and their organic production is a fundamental requirement established by the Regulatory Council of Clàssic Penedès. In addition, to be classified as Clàssic Penedès, the wines must be 100% Reserve and have spent more than 15 months in the cellar.
As for the varieties, although the Regulatory Council does not require the use of any grape, most wineries opt for classic varieties, such as the Chardonnay grape, which is the greatest exponent of the Penedès sparkling wines. It is mandatory to use only the natural sugars of the grape. It is also allowed to use the Macabeo, Parellada and Xarel lo varieties.
