How are sweet wines made?

Sweet wines are made using specially selected grapes that contain a high sugar content. There are several methods to achieve this characteristic sweetness. One of them is the late harvest, where the grapes are left on the vine longer than usual to ripen and concentrate natural sugars. Another method is the use of grapes affected by "botrytis cinerea", a beneficial fungus that dehydrates the grapes and increases the sugar concentration. Sugars can also be added to the wort during fermentation or stopped before all the sugar has been converted to alcohol. These processes result in sweet wines with rich flavors and a balance between sweetness and acidity.

  • Port

Port is a fortified wine originating from the Douro region of Portugal. It is produced from a mixture of native grape varieties, such as Touriga Nacional, Touriga Franca and Tinta Roriz. Port is known for its sweet and rich flavor, with notes of dried fruit and caramel. It can be enjoyed as an aperitif or accompanying desserts.

    Moscatel or Moscato

Moscatel wine, also known as Moscato in some places, is made from the Moscatel grape. It is a sweet and aromatic wine with a distinctive flavor of fresh grapes and floral notes. It usually has a low alcohol content and a slight effervescence. Moscatel can be enjoyed alone or paired with light desserts and fresh fruits.

Tokaji is a sweet wine from the Tokaj region in Hungary. It is made mainly from Furmint, Hárslevelű and Sárgamuskotály grapes. The Tokaji production process involves the use of grapes affected by "noble rot" (Botrytis cinerea), which gives them their distinctive character. Tokaji wines are known for their intensity and complexity, with flavors ranging from peach and citrus to honey and dried fruit. It is considered an exceptional dessert wine and can be aged for many years.

Garnacha is a red grape variety that is used to produce sweet wines in different regions of the world, such as Spain and the south of France. Sweet Garnacha wines tend to have intense, fruity flavors, with hints of cherry, ripe red fruit, and spices. These wines can be both dry and sweet, but they stand out especially for their sweet version.

  • Mistela

Mistela is a type of sweet wine that is made by mixing grape must with alcohol, usually brandy, before fermentation is complete. This stops the fermentation and preserves some of the natural sugar in the grape, resulting in a sweet wine with a higher alcohol content. La Mistela is produced in various wine regions of Spain and can be enjoyed as an aperitif or as an accompaniment to desserts.

    Pedro Ximénez (PX)

Pedro Ximénez (PX) wine is a sweet wine made from the grape variety of the same name. It is grown mainly in the Montilla-Moriles region, in Spain. The grape clusters are sun-dried to concentrate the sugars before fermentation. The result is a very sweet wine, with intense notes of raisins, figs, caramel, and chocolate. The Pedro Ximénez is an excellent dessert wine and can also be enjoyed with blue cheeses and dark chocolate.

Sauternes is a world-renowned sweet wine produced in the Sauternes region of Bordeaux, France. It is made from Sémillon, Sauvignon Blanc and Muscadelle grapes that have been affected by noble rot (Botrytis cinerea). Noble rot dehydrates the grapes, concentrating the sugars and developing complex flavors. The result is a sweet and seductive wine, with notes of honey, apricot, peach, and caramel. Sauternes wines are of high quality and are wonderful accompaniments to foie gras, blue cheeses and elaborate desserts.

These are just a few more examples of sweet wines you can explore. Each one offers a unique experience and are ideal to enjoy on special occasions or as a pairing with certain dishes. Health!
