Spanish gins are made following a careful and diverse process. The neutral alcohol base used can be cereal or fruit, such as grapes. A variety of botanicals are selected and combined, which may include juniper berries, coriander, citrus, angelica root, cardamom, cinnamon, licorice, and other aromatic and spicy ingredients. These botanicals are macerated in alcohol or placed in a steam basket inside the still, and then distillation is carried out. Distillation can be in traditional copper stills or more modern methods.
