During this time, the Cava undergoes a second fermentation in the bottle, generating the characteristic effervescence of sparkling wines. The long period of aging in contact with the lees (yeast remains) contributes to the formation of complex and sophisticated flavors in the wine.
A Cava Gran Reserva must age for at least 30 months, with a minimum of 24 months in contact with the lees. However, some producers opt for longer aging, reaching periods of 36 months or even more.
