Sweet cavas are sparkling wines that are characterized by having a sweet flavour and an intense and fruity aroma. These wines are made primarily in the Catalonia region of Spain using the traditional method of making sparkling wines, known as the "champenoise method."
To produce sweet cavas, grape varieties such as Macabeo, Parellada and Xarel·lo are used, which are harvested when ripe and gently pressed to obtain the must. The must then undergoes fermentation in stainless steel tanks at a low temperature, to preserve the fresh and fruity aromas and flavours.
After fermentation, the base wine is bottled together with a mixture of yeasts and sugars and sealed with a cork. In the bottle, a second fermentation takes place that creates the characteristic bubbles of sparkling wines. During this process, the sugars are converted to alcohol and carbon dioxide, resulting in a sweet taste and creamy mouthfeel.
Sweet cavas can have different levels of sweetness, from the driest (brut nature) to the sweetest (dulce). They are ideal to accompany desserts and appetizers and can also be enjoyed as an after-dinner wine.
