How are Bourgogne Gamay Contrôlée red wines made?

Bourgogne Gamay Contrôlée red wines are made following a vinification process like that of other red wines.

The harvest is done by hand to guarantee the quality of the Gamay grapes. Ripe grapes are selected and harvested at the optimum moment of ripeness.

The grapes are separated from the clusters and lightly broken to release the must and the compounds in the grapes. Some growers may choose to ferment whole grapes without destemming.

The must (grape juice) is placed in fermentation tanks, where selected yeasts are added, or spontaneous fermentation is allowed with the yeasts naturally present in the grapes. During fermentation, the sugars present in the must are converted into alcohol, producing characteristic aromas and flavors.

During fermentation, a maceration can be carried out to extract the color, flavor and tannin compounds from the skins of the grapes. The duration of the maceration can vary according to the style of wine that is desired but is generally shorter than that of red Pinot Noir wines from Burgundy.

After fermentation and maceration, pressing is carried out to extract the remaining liquid from the skins and seeds. This liquid is added to the resulting wine.

Some Bourgogne Gamay Contrôlée red wines may go through an aging process in oak barrels. This can add complexity and notes of vanilla and spice to the wine. However, not all producers opt for barrel aging, and some wines may be fresher and fruitier.

After a suitable period of aging, the wine is bottled. Some producers may opt for pre-bottling filtration, while others prefer to bottle unfiltered to further preserve the integrity of the wine.
