In some cases, barrel fermentation can be carried out to add complexity and texture to the wine.

Alcoholic fermentation begins with natural or selected yeasts, converting the sugars in the must into alcohol. During this process, temperature and other factors are carefully controlled to preserve the characteristic aromas and flavors of the grape varieties used. After fermentation, some white wines from Maremma Toscana can be aged on the lees, which involves leaving the wine in contact with the yeasts and cellular residues to provide greater complexity and creaminess.

Finally, the wine is clarified, filtered, and stabilized to eliminate possible sediments and avoid possible stability problems.
