Red Wines I.G.P. (Protected Geographical Indication) Pays d'Oc are wines produced in the Pays d'Oc wine region in southern France. This denomination refers to a wide geographical area that covers several departments in the south of France, such as the Hérault, Aude, Gard, and part of the Pyrénées-Orientales.

What red grape varieties are in the I.G.P. Pays d'Oc?

The I.G.P. Pays d'Oc has a wide variety of red grapes used to make its wines. Among the most common are Merlot, Cabernet Sauvignon and Syrah, which provide rich fruit flavors and spicy notes. Native grapes such as Carignan and Cinsault are also used, adding character and complexity to the wines. Other lesser known, but equally interesting varieties include Grenache, Mourvèdre, and Malbec, among others.

This diversity of grapes allows the region's producers to create unique and attractive red wines, each with its own distinctive characteristics and reflecting the terroir of the Pays d'Oc.

How are the red wines of I.G.P. Pays d'Oc?

The red wines of I.G.P. Pays d'Oc are made following traditional processes and modern techniques to highlight the expression of the terroir and the characteristics of the grapes. First, the selected grapes are manually or mechanically harvested and destemmed. The clusters are then fermented in large stainless-steel tanks, where the conversion of sugar to alcohol occurs over a controlled period, with the help of natural or added yeasts.

During fermentation, pump-overs and pigeages (processes to mix the must and the skins) are carried out to extract colour, tannins, and flavors from the skins of the grapes. After fermentation, maceration is carried out to obtain a greater extraction of compounds and aromas.

Once fermentation and maceration are complete, the wine is separated from the solids and transferred to oak barrels, where it can be aged. Some wines undergo short barrel aging, while others may remain longer to develop complex flavors and soften tannins. At the end of the aging process, the wines are bottled and, in some cases, may be allowed to rest in the bottle for additional time before being marketed.

The result is a wide range of red wines from I.G.P. Pays d'Oc with different styles and flavor profiles, from young and fruity wines to more structured and elegant wines. The diversity of grape varieties and the winemaking techniques used allow producers to offer high-quality red wines with great gastronomic versatility.

With what can we accompany the red wines of I.G.P. Pays d'Oc?

The red wines of I.G.P. Pays d'Oc are very versatile and can be accompanied with a variety of dishes. Their fruity, spicy profile and soft tannins make them ideal for pairing with red meats, such as a juicy veal fillet or tender roast lamb. They also complement very well with dishes of game birds, such as duck or partridge. For those who prefer vegetarian options, these wines can enhance the flavor of pasta dishes with rich and flavorful sauces, as well as medium-aged cheeses. They are even an excellent option to enjoy with a table of sausages and serrano ham.

In general, the red wines of I.G.P. Pays d'Oc are a wise choice for many dining occasions, providing a satisfying and well-balanced dining experience.
