Sparkling wines from Italy are mainly made using the Charmat method, also known as the Italian closed tank fermentation method. In this process, the grapes are harvested and gently pressed to extract the must. Then, it is fermented in stainless steel tanks under controlled conditions, where yeasts and sugars are added to start the second fermentation. During this phase, carbon dioxide is produced, which is trapped in the wine, creating bubbles. After a period of tank aging, the wine is filtered and bottled.
