In the Côtes du Roussillon region, various red grape varieties are grown that contribute to the production of high-quality wines. How are the red wines of the Côtes du Rousillon made?

The production of Côtes du Roussillon wines follows traditional winemaking methods. The grapes are harvested by hand at the optimum moment of ripeness. The Roussillon region has a Mediterranean climate, which allows the grapes to ripen well.

They are then separated from the clusters and can be broken slightly to release the must and compounds from the grapes.

The must is placed in fermentation tanks, where selected yeasts are added, or spontaneous fermentation is allowed with the yeasts naturally present in the grapes. During fermentation, the sugars are converted into alcohol and characteristic aromas and flavors develop.

A maceration can be performed to extract the color, flavor and tannin compounds from the skins of the grapes. The duration of the maceration can vary according to the style of wine that you want to obtain.

After fermentation and maceration, pressing is carried out to extract the remaining liquid from the skins and seeds. This liquid is added to the resulting wine.

Some Côtes du Roussillon wines may undergo an aging process in oak barrels to develop greater complexity and subtle flavors. Other wines can be fresher and fruitier, without prolonged aging.

After a suitable period of aging, the wine is bottled. Some producers may opt for pre-bottling filtration, while others prefer to bottle unfiltered to further preserve the integrity of the wine.
