After fermentation, a prolonged maceration takes place, where the must and the skins are kept in contact to extract phenolic compounds, such as tannins and pigments. During this stage, pumping over and pigeage (pressing the hat) are carried out to ensure uniform extraction.

The wines of A.O.C. Saint-Estèphe usually goes through a period of aging in oak barrels, which can last between 12 and 18 months, depending on the producer and the desired style. During this time, the wine softens, flavors integrate, and complex aromas from the oak develop.

After aging, the wines are blended in what is known as a coupage, where different batches are combined to achieve the desired flavor profile. Finally, the wine is bottled and can continue to age in the bottle before being sold.
