The Designation of Origin Jerez, also known as D.O. Jerez-Xérès-Sherry, is one of the most emblematic wine regions of Spain, located in the province of Cádiz, in Andalusia. Although the D.O. Jerez is famous for its fortified wines such as Jerez, it also produces high quality dry white wines that deserve recognition.
The white wines of the D.O. Jerez are made primarily from the Palomino Fino grape variety, which is the most cultivated in the region. These grapes produce dry and light wines, with balanced acidity and remarkable freshness. The region's characteristic terroir a combination of clay and albariza (a type of white, calcareous soil), also influences the unique characteristics of Jerez white wines.
One of the most outstanding aspects of Jerez white wines is their aging process under the criaderas y soleras system. This system consists of a series of superimposed barrels where the youngest wines are mixed with older wines, thus creating continuous aging and an amalgamation of flavours and aromas. This aging process gives Jerez white wines a unique complexity and gives them a wide range of organoleptic characteristics.
The dry white wines of Jerez exhibit a great diversity of flavours and aromas. They present notes of almonds, fresh herbs, green apples, citrus and saltiness, with an elegant minerality on the palate. In addition, they usually have remarkable acidity and a long, dry finish.
Regarding the classification of white wines from Jerez, there are different recognized styles. For example, Fino is a very dry and light white wine, while Manzanilla is like Fino but is produced exclusively in the city of Sanlúcar de Barrameda, near the mouth of the Guadalquivir River.
