Red wines with Denomination of Origin (D.O.) Ribeiro come from the Ribeiro wine region, located in the province of Ourense, in the autonomous community of Galicia, in northwestern Spain. This region is known to produce white wines, but excellent quality red wines are also produced and is one of the oldest denominations of origin in Spain, with a long winemaking tradition dating back to Roman times.

What red grape varieties are there in the D.O. Ribeiro?

In the Ribeiro Designation of Origin, several red grape varieties are grown to produce red wines. The Sousón is an autochthonous variety from Galicia, also known as "Vinhão" in other parts of the region. It produces intense red wines with a good level of acidity. How are the red wines of D.O. Ribeiro?

The elaboration of the red wines of the Denomination of Origin Ribeiro generally follows the following steps. The red grapes are harvested at the optimum moment of maturity, generally in the months of September or October. The grapes are harvested by hand or mechanically and transferred to the winery for processing.

In the winery, the grapes are destemmed to separate the clusters from the green parts and lightly squeezed to release the must and the grape skins.

The must and the skins of the grapes are placed in fermentation tanks, where alcoholic fermentation occurs. During this process, yeasts naturally present in the grapes or intentionally added, convert the sugars in the must into alcohol, generating heat and releasing carbon dioxide. Fermentation can last several days or weeks, depending on the desired style of wine.

During fermentation, the skins of the grapes remain in contact with the must to extract colour, tannins, and aromatic compounds. This maceration period can vary depending on the style of wine to be produced. Some Ribeiro red wines have a short maceration for lighter, fruitier wines, while others may have a longer maceration for more structure and complexity.

Once fermentation and maceration are complete, the solid remains are pressed, that is, the skins and seeds of the grapes, to extract the remaining liquid and obtain the wine.

Some red wines from the D.O. Ribeiro can go through a process of aging in oak barrels, where the wine is aged for a certain period. Barrel aging provides additional characteristics to the wine, such as notes of vanilla, spices, and greater aromatic complexity.

After aging, if applicable, the wine may go through a clarification and filtering process to remove possible sediments and obtain greater clarity and stability.

Finally, the wine is bottled and closed with a cork or screw cap, depending on the producer's choice. Then, the red wines of the D.O. Ribeiro are ready for sale and consumption.
