How are sweet wines made?

Sweet wines are made using specially selected grapes that contain a high sugar content. There are several methods to achieve this characteristic sweetness. One of them is the late harvest, where the grapes are left on the vine longer than usual to ripen and concentrate natural sugars. Another method is the use of grapes affected by "botrytis cinerea", a beneficial fungus that dehydrates the grapes and increases the sugar concentration. Sugars can also be added to the wort during fermentation or stopped before all the sugar has been converted to alcohol. These processes result in sweet wines with rich flavors and a balance between sweetness and acidity.

  • Port

    Port is a fortified wine originating from the Douro region of Portugal. It is produced from a mixture of native grape varieties, such as Touriga Nacional, Touriga Franca and Tinta Roriz. Port is known for its sweet and rich flavor, with notes of dried fruit and caramel. It can be enjoyed as an aperitif or accompanying desserts.


    Moscatel or Moscato

    Moscatel wine, also known as Moscato in some places, is made from the Moscatel grape. It is a sweet and aromatic wine with a distinctive flavor of fresh grapes and floral notes.     Pedro Ximénez (PX) wine is a sweet wine made from the grape variety of the same name. It is grown mainly in the Montilla-Moriles region, in Spain. The grape clusters are sun-dried to concentrate the sugars before fermentation. The result is a very sweet wine, with intense notes of raisins, figs, caramel, and chocolate. The Pedro Ximénez is an excellent dessert wine and can also be enjoyed with blue cheeses and dark chocolate.


    Sauternes

    Sauternes is a world-renowned sweet wine produced in the Sauternes region of Bordeaux, France. It is made from Sémillon, Sauvignon Blanc and Muscadelle grapes that have been affected by noble rot (Botrytis cinerea). Noble rot dehydrates the grapes, concentrating the sugars and developing complex flavors. The result is a sweet and seductive wine, with notes of honey, apricot, peach, and caramel.
